Abstract:
      To explore detection techniques for ochratoxin B(OTB)and ochratoxin C(OTC)in fish meat, as well as precise detection techniques for ochratoxin A(OTA), a new method was developed for simultaneous determination of OTA, OTB and OTC in crucian carp using ultra-high performance liquid chromatography tandem mass spectrometry(UPLC-MS/MS), and the contamination of 3 toxins in 15 samples collected from Hangzhou market was determined. The results showed that the proposed method had a good linear relationship in the mass fraction range of 0.1~50 μg·kg-1, and average recovery rates of 1, 5 μg·kg-1 and 25 μg·kg-1 were 77.15%-107.59% through pretreatment and optimization of detection conditions. The OTA detection rate of 15 commercially available samples was 20%, and the highest detection value was 0.453 μg·kg-1. This method has good recovery rate and reproducibility, and is suitable for residual detection of ochratoxin in fish meat.
